Pork and Pepper Stir Fry Recipe
In honor of Asian American and Pacific Islander Heritage Month, our Vice President of Human Relations Carol Luo is sharing her family’s favorite Chinese stir fry dish to honor her heritage. We hope you give it a try!
How to Make Pork and Pepper Stir Fry
Ingredients:
- ½ pound thinly sliced pork tenderloin
- 4 fresh Anaheim peppers
- ¼ cup + 2 tsp canola cooking oil
- 3 minced garlic cloves
- 1 tbsp light soy sauce
- ½ tsp salt
- 1 tbsp chicken broth
- 1 tsp white cooking wine
- 3 tsp cornstarch
Instructions:
- Place the pork in a large bowl, then add salt, soy sauce, broth, cooking wine, and cornstarch. Combine well and ensure the pork is evenly coated with the mixture.
- Marinate for 15-30 minutes. Add 2 tsp of canola oil and mix again.
- Add ¼ cup of cooking oil to the wok and heat on medium-high heat until hot. Add the pork mixture and stir until cooked.
- Remove the pork from the wok and fry the garlic in the remaining oil.
- Add pepper, drizzle soy sauce, and stir until slightly softened.
- Mix in pork. Stir until thoroughly cooked.

- A significant part of Chinese cooking is the personal touch.
- All portions are approximate, and it can take a few tries to get the dish to taste exactly how you like it. That is part of the fun.
- If you enjoy spice, add additional spicy black bean seasoning – it goes very well with this dish.
- Significant chopping and slicing is involved, as for most Chinese dishes.
