Cucumber “Sandwich”
Ingredients:
- Cucumbers
- Cheese slices
- Low sodium deli meats
Directions:
- Peel and slice cucumbers
- Place a small slice of cheese on top of one cucumber slice
- Layer with choice of deli meat(s)
- Place a second cucumber slice on top
Banana Sushi Roll Up
Ingredients:
- 100% whole wheat flour tortilla, small
- 1 large banana
- 2 tablespoons peanut butter, soy butter, sunflower butter or any other nut butter
Directions:
- Engage the kids by having them help make their own roll. Have them spread the peanut butter (or other choice) on the tortilla with the back of a spoon.
- Place peeled banana at one end of the roll up.
- Slice into eight pieces.
Cracker Stackers
Ingredients:
- Half-pint, wide-mouth mason jar and lid
- Empty applesauce container
- Low sodium deli meat
- Cheese slices
Directions:
- Add meat and cheese into the jar and place crackers in the clean applesauce container. The crackers stay separate and will not get soggy.
Variation:
- Fill granola in the applesauce cup and yogurt in the mason jar.
- Mix the granola into the yogurt when ready to eat.
